Happy Halloween!


I have to say that I am not a big fan of Halloween, but since I have kids we do a few things as well. Nothing over the top and we won't turn the yard into a graveyard or haunted house. We bake Halloween cookies.....

and carve pumpkins .....

and I decorate the front entrance, and that's it .
I saw this idea with the pumpkin eating the little ones on the Internet and thought I give it a try.

It turned out great .

I like the creative part of Halloween and when the kids were smaller we did a lot more crafting around this time. I made costumes pretty much every year for some , or all of my kids, but this year I don't have to. They recycled some of the old costumes. Yeah!

I will post pictures of costumes later.....

I never baked anything with pumpkin, so this year I gave it a try.
I made a pumpkin roll with cream cheese filling!

Oh my god, it's so good!!

The recipe was from the Libby's pumpkin puree can.

Pumpkin Roll:

Cake

  • Powdered sugar( Icing sugar)
  • 3/4 cup all-purpose flour
  • 1/2 tsp.baking powder
  • 1/2 tsp.baking soda
  • 1/2 tsp.ground cinnamon
  • 1/2 tsp. ground cloves
  • 1/4 tsp. salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup pure pumpkin (Libby's)
  • 1 cup chopped walnuts( I used pecans)

Filling

  • 1pkg(8oz.) cream cheese,softened
  • 1 cup sifted powdered sugar
  • 6 tbsp. butter or margarine, softened
  • 1 tsp vanilla extract.
  • powdered sugar

For the cake: Preheat oven to 375 F, Grease 15x10 inch jelly roll pan, line with wax paper. Grease and flour paper. Sprinkle thin kitchen towel with powdered sugar

Combine: Flour, baking powder,baking soda,cinnamon, cloves and salt in a small bowl. Beat eggs and sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mix. Spread evenly into prepared pan. Sprinkle with nuts.

Bake for 13-15 min. or until top of the cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together,starting at the narrow end. Let cool on wire rack.

For the filling: Beat cream cheese, powdered sugar, butter and vanilla extract in small mixing bowl until smooth. Carefully unroll cake, remove towel.Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least for 1 hour. Sprinkle with powdered sugar

  1. Deine Kürbisrolle sieht toll aus - ich bin gespannt auf das Rezept!
    Bei uns war es dieses Jahr recht still zu Halloween, ich habe das Gefühl, die Industrie ist mehr daran interessiert, daß sich dieser Brauch hier in Deutschland verbreitet, als die Menschen selbst ;o)

  2. Genauso seh ich das auch , weil Halloween ja kein deutscher Brauch ist und die Kohle die mit dem Kram gemacht wird ist echt abartig!
